1.将中种面团材料(高筋面粉175g,水100g,酵母1小勺,糖10g)混合搅拌

2.揉成面团后,放入冰箱冷藏一晚上发酵至2-3倍大

3.主面团材料(高筋面粉50g,低筋面粉25g,淡奶油22g,白糖35g,奶粉10g,盐3g,鸡蛋液35g)除黄油外其它材料混合

4.将发好的中种面团撕成小块也放入一起,搅拌面团

5.搅拌成光滑面团后,加入黄油搅拌至扩展阶段

6.搅好的面团揉圆

7.盖保鲜膜室温发酵40分钟

8.然后将面团取出揉匀排气,分成50g一个的小份

9.将每一份揉圆松弛15分钟,把豆沙馅也分好

10.松驰好的小圆面团擀成圆形,放入豆沙馅

11.包起来,口子收紧朝下放

12.所有的做好放烤盘上

13.盖保鲜膜再次发酵,发到约2倍大,然后刷上一层鸡蛋液

14.中间撒上黑芝麻

15.放入预热好的烤箱中层,180度,16分钟左右

16.烤好后取出晾凉
小窍门&温馨提示
烤的时候表面上色满意了就在表面盖上一层锡纸,防止表面烤糊了!
最后一次发酵的时间是和温度有关的,看到体积变大变轻了就表示发酵好了!
